Weekend Cooking: What's Your Favorite Breakfast Sandwich?

2008_6_14-breakfastsandwich.jpgWhen we're cooking breakfast for two or more, we turn to crowd-pleasing egg dishes like casseroles, stratas and breakfast pizza. But when it's just us, and we're craving something hearty and simple, nothing beats a breakfast sandwich.

 
 

Breakfast sandwiches are infinitely adaptable and seldom require a recipe. When we're in the mood for a guilty pleasure, we go for sweet and savory with whole-grain toaster waffles, sausage patties, eggs, cheese and a drizzle of maple syrup (we'll admit, it's essentially a homemade McGriddle but, like we said, it's a guilty pleasure).

For something lighter, we cook and egg or two, add some seasonal vegetables (these days, it's all about asparagus), sprinkle with whatever cheese we have on hand, and eat on some good crusty bread. Incredibly basic, but so satisfying.

So, what's your favorite breakfast sandwich? Eggs scrambled, over easy, hard boiled or other? Meat or no meat? Open face?

I know this right up there with a spam sandwich, but my mom used to make this Eggo sandwich - it was made of:
2 toasted eggos
Mayo on both sides (I know, really healthy)
bacon
sliced tomatoes
slice of kraft single cheese (happy to say I have not had in about 15 years)
an egg fried over medium
and sometimes, a drizzle of maple syrup on the bacon side...

I know this may sound strange, but I have made this breakfast sandwich for friends and they always ask for it now....The only change I make is that I use mild cheddar & turkey bacon. Pretty good on a winter morning after a long night!!

I think it'll be a simple bacon and egg sandwich for me. I like using english muffin bread, toasted and then with mayo on one of the pieces of bread. Then a few slices of bacon and a fried egg with a still runny yolk. Simple and yet so very good.

My other favorite is an open faced sandwich. But you start with scrambling a couple of eggs with a hearty pinch of dried sage and some feta. Don't let the eggs get too firm...turn off the heat once it starts to set up. Then pile that on top of a toasted (open face) english muffin. So. Delicious.

I love an open-face leek & scrambled egg sandwich, discovered at Orangette, but I also admit that every once in a while I need a sausage and egg McMuffin, complete with plastic cheese.

I think that I love this so much because I had it while on vacation in Kauai..and everything tastes better in that setting. Just a simple lettuce, tomato, ham and scrambled eggs with mayo on whole wheat. Not the healthiest sandwich in the world, but delicious (and it brings back great memories).

toasted onion bagel with a garlic fried egg (yolk still runny), veganaise, hot sauce (I recently switched to Frank's Red Hot after many years of thinking it was too generic to be any good), avocado, truffle salt and black pepper. Sometimes a slice of cheddar if I've got it around. Also, a homemade latte is so important. Damn, now I have to go make one!

I make my own version of an egg McMuffin, minus the Canadian bacon and plus a few dashes of Worcestershire sauce (which is also an excellent secret ingredient in grilled cheese sandwiches).
I cook the egg in a ramekin in the microwave--not only does it come out cooked perfectly, but also the exact size of the English muffin! The muffin goes under the broiler with some sharp cheddar.

if I have fresh bread, I toast it lightly, rubbed with olive oil and garlic and through my over easy egg on top.

No fresh bread...I usually have pitas in the fridge. Warm one up, slice in half, spread on some hummus and anything else you like. then put a cooked egg in each half.

I like Eggs Benedict and all their variations. My favorite is a dish that my local breakfastery Stacks calls "Eggs Blackstone": English muffin, sauteed mushrooms, chopped and fried bacon, and chopped tomatoes, and the poached egg on top. Oh yeah, and a bit of hollandaise. I never make this at home though; I'm too lazy. :-)

I love all matters of fancy breakfasts, but sometimes I gotta have ghetto style breakfast sandwich: 1 egg cooked over hard, on toasted white bread with a slice of fried bologna, hot sauce and plenty of ketchup!

I have two favorites: banana and Nutella panini, or a grilled baguette filled with sliced peaches and mozzarella di bufalla and drizzled with olive oil and honey. Heavenly!

Grilled cheese on whole grain bread, with sharp cheddar, grilled sliced tomato, and three strips of Morningstar Farms Breakfast Strips (fake bacon for vegetarians). Also love an open-faced grilled cheese with grilled sliced tomato and sauteed tri-color pepper strips. Wonderful!

I love the homemade version of a croissan'wich if I have croissants, but wheat bread works, with one egg over easy, sausage, and some cheese. I, too, used to think nothing beat a breakfast sandwich until I ran into a breakfast burrito crisped up a bit in a panini press. Since I don't have one at home, I just grill it on a skillet for a few minutes on each side.

There are few things I love more than a sausage biscuit, but I also love a nice Spanish fried egg served on a piece of toasted Italian bread sprinkled with a little salt, pepper and parmesan cheese.

They might not count as a sandwich, but breakfast tacos rule! Potatoes, chorizo, green peppers, onions, scrambled eggs all cooked in one pan and rolled in a lightly toasted flour tortilla. Don't forget the salsa and shredded cheese. Mmmmm....

I love a whole wheat wrap with scrambled egg whites, turkey, and american cheese.

I also love a bagel with a sliced hard boiled egg, salt, pepper, and a tiny bit of mayo.

Whole Foods brand toasted english muffin, over easy egg, sharp cheddar, and sea salt.

Or two slices of rosemary olive oil bread with scrambled eggs and jack cheese.

Both of these are improved with some pork sausage on the side, but they are fairly awesome alone. It ain't breakfast without eggs, preferably of the fresh and local persuasion.

Corn tortilla filled with scrambled eggs, cheese, tomato, red and green peppers, and plenty of salsa.

Not exactly a 'sandwich' but wash it down with a glass of horchata and its just as good... I think much better... thank you mother!

Sesame seed bagel, toasted and buttered, with an over easy egg, Canadian bacon, and shredded cheddar cheese. Maybe a slice of tomato, if I'm feeling the need for a little more healthy-ness...

Super simple: crunchy multigrain toast many thin slices of tomato (hooray for BC Hothouse grown tomatoes, no salmonella here), on top of mayo and a generous sprinkling of sea salt. I absolutely love this sandwich for breakfast, and when I crave it, I may add ketchup for some reason (I think it's the tang), or avocado & havarti cheese. Especially if I have any roasted garlic havarti kicking around.

a biscuit with some country ham, bacon or sausage and a fried egg makes me a happy girl. :)

i also like to do a peanut butter and honey panini, or a goat cheese and honey panini.

bagel or favor bread.
slice of tomato
favorite cheese. i like mozzarella.
sprinkle with basil or time.

place under broil for a few minutes.
delicious!!!!
