The concept of pie - as in apple, peach and blueberry - is almost an entirely American phenomenon. Rarely will one see a pie on a European menu. In France, "pies" don't exist. One can order a "tart", but it is impossible to find pie on the menus in French restaurants or in French homes. Ironically, it is a Frenchman, Jacques Henry of Emile Henry in Marcigny, France, who was granted a United States Patent for an American Pie shape. His design gives the traditional American dessert a uniquely rural, French perspective.

The Emile Henry design features delightfully scalloped edges, reminiscent of the edge created when pie dough is fluted or crimped - a worthy aspect in addition to its functional capacity for both sweet and savory pies. It is an idea that was inspired by a turn of the century shape that Jacques Henry observed in an old photograph that graced a fireplace mantle in the family home. The Emile Henry pie dish, like all Emile Henry oven-to-table-ware, is a natural product handcrafted from Burgundy clay. The dish is highly resistant to breakage and can go directly from the freezer to the oven. The dish will not craze or discolor.

We really like the 3-year warranty and the total durability of Emile Henry pieces, not to mention the cute fluted edges. All the ceramic bakeware is made in Marcigny, France, since 1850 from high fired Burgundy clay. We also like that these pieces stay hot and keep cold - you can use directly from freezer to oven to table (0°F to 500°F). Dishwasher safe too!

My favorite summer pie is a Georgia Peach Pie. During the hot months of July and August, the peaches start rolling in the farmer's markets: juicy and tender, with vivid red seeds. My pie uses peach halves instead of quarters and they're stacked in a deep pie dish. The result is amazing fruit pie, with pink and yellow colors.

rhubarb frangipane pie. traditionally the frangipane or almond cream is paired with pears because the subtlety of the pears balance out the extremely sweet cream. but since it is summer and rhubarbs in season, resoundingly tart and flavorful, i think it would provide a nice contrast to the frangipane.

Rhubarb. Every year I visit my grandma near my birthday and we make a rhubarb pie with rhubarb from her garden together. She has a wonderful set of different size pie pans and we also have little extra crust that we make into a cinnamon and sugar pie.

Cherry. And Lemon Meringue. Both because of my mother. Her birthday is right around the 4th of July and growing up we used to have big bbqs to celebrate both. She would always make a mile high lemon meringue that would knock your socks off, from scratch no less. Cherry pie is her favorite though and this year I aim to bring her a homemade one straight from my kitchen in SF to hers down in Long Beach to celebrate.

Peaches and Cream pie. It satisfies fruit lovers, cake lovers and pie lovers alike in one sweet, creamy bite.

There's variations of this pie on sites like allrecipes.com (which use canned peaches, instant pudding, etc.) but nothing beats my mom's version with fresh peaches.

I imagine this would be fantastic with strawberries, too.

Sour cream raisin, since it's almost Father's Day. It wasn't until I moved away from home that I realized my dad's favorite pie was almost unknown in the outside world! But it's a great pie, especially with meringue.

depends on the season- in the summer, it's blackberry or fresh strawberry (with at least 4 inches of fresh whipped cream on top), and in the winter it's pumpkin pie all the way.

Nectarine crumble. With white nectarines off my own trees, in about two weeks. A friend makes a cobbler with white and yellow nectarines and I adapted her recipe to a pie, because all cobblers are better reinterpreted as pie.

This year I want to make individual-sized pies to take in lunches.

It used to be strawberry rhubarb, but rhubarb is hard to find in Arizona. Now, it is peach with a cornmeal crust.

I love this pie pan! My birthday is also in August, I have homemade raisin pie (if we can find it) instead of cake. I definitely need learn how to make it . My Mom use to make it before she gave up making pies. My Mom also use to make sour cherry from our trees we use to have. Wow! does that bring back sweet summer memories.

Peach pie, because my mom's birthday is in June, and that's what she likes in lieu of a cake.


(Not that anyone asked, but peaches (among other fruits) exude lots of juice when they bake in a pie. If you include some dried fruit, it'll soak up the juice and thus make the pie less runny and the crust crisper (or at least, less soggy). The dried fruit doesn't have to match the fresh fruit.)

Warm razzleberry pie with a scoop of French Vanilla ice cream is the BEST! I use a 150-year-old pie crust recipe that uses one egg and vinegar, and comes out so flaky and flavorful. A combination of raspberries, blackberries and boysenberries make the yummiest and most nutritious summer pies. Memorable, and even more so with the beautiful Emile Henry pie dish.

There's something SO inviting about a Dutch Apple Pie! That's my favorite pie of all for summer. I remember in the movie Starman (yes, I am old!), his favorite Earth food was Dutch Apple Pie, too.

Mmm, comparing pie to a summer's day? I'd bake blueberries in the green pie dish, and blackberries in the pink pie dish, and peaches and raspberries in the brown pie dish, and cherries in the blue dish. Then I'd continue to rotate the combinations, and enjoy each fruit in its season. Sweet memories!

Favorite summer pie is my Mom's homemade blueberry pie. It was my Dad's favorite too! He used to love to snag a piece shortly after it came out of the oven, and while it was warm, would plop a big scoop of vanilla ice cream on it!

I STILL eat it that way to this day!
