What is it about Mothers' Day and lemon cakes? They just seem so right with their biting sweetness.

In the midst of our cake-test-lab activities these last few days (you know we're writing a baking book, yes?), we found time to test the lemon mousse cake recipe, just in time for dinner with the mother and the mother-in-law. Since the mother was here visiting from California "to help" (pregnant ladies need lots of help), she actually made the majority of her own mothers' day cake. Some things never change.
