Cook This: David Lebovitz's Black-Bottom Cupcakes

2007_03_12-Cupcake-.jpgWe recently whipped up a batch of these Black-Bottom Cupcakes for a casual dinner party and ever since then we've been meaning to tell you about them.

First they're easy. The chocolate cupcakes are oil-based and they come together in just a few minutes. Secondly, and most importantly, they're amazing! The chocolate is intense, yet with a light and springy texture that makes a nice contrast to the real star: a deeply luscious cream cheese filling with chunks of chocolate.

We suggest substituting cacao nibs in the filling for an even more grownup taste and texture contrast. We doubled the recipe but still didn't take a single one back home.

I made a chocolate cake (very Southern, including coffee and peanut oil) last week with a butter/cream cheese "custard" frosting and it was awesome...light light light

I saw this recipe on Leite Culinaria about a month ago. Made it for the office and everyone RAVED. I thought the recipe was really easy to make and came out perfectly as written. Looking forward very much to David Lebovitz's Ice Cream cookbook that comes out soon.

Black Bottoms are a great party item...people love them....my trick with them is to make them in mini muffin size...they are so rich that all you really need is bite size. I'm going to try this recipe in the smaller size.

My grandmother has been making these for years. We just LOVE them. One day she ran out of muffin tin liners and she make it as a cake, in a brownie pan and it was delicious. She also sprinkles the tops with chopped walnuts mixed with a little bit of sugar. for some reason she always makes them with the foil muffin tin liners and there's something really cool about peeling away the foil from the cake. I've found that if you make the cream cheese mixture ahead of time and let it cool it stays in a nice lump, like a bite of cheesecake.

I just made these for my boyfriend in the army! They were a great surprise and traveled really well and kept their moisture wrapped in cling wrap. He loved them and all his buddies kept asking him for some! Even his superiors.
