What Are You Eating for Lunch?

We haven't asked in a while - so we're asking now. What are you eating for lunch today? We have a big tub of tabbouleh, some goat cheese and crackers. We also have some Asian pears and other fruit goodies that we are snacking on. Did you brown-bag it today? Or are you eating out?

After reading the earlier post, my daughter and I had spaetzle with a poached egg. It was my first attempt at spaetzle and it turned out great. We'll be having it again.

A quickly tossed together salad of baby greens, carrots, celery and almonds; topped with Newman's Balsamic Vinagrette; a terrible orange (I had to throw it away) and a cup of chocolate pudding. Nothing too exciting!

Salad - Romaine and Feta from the local foodmarket, craisins and almonds.
Chicken Florentine with Couscous... I got the recipe from the inside of a Parmesan couscous box... :)

Spring mix with figs, nuts, shallot and a balsamic dressing. Jalapeno cheddar bread and garlic hummus. An apple for dessert. Yum.

I am having leftover Lentil and Chorizo soup, one of three soups I made for dinner last night. It makes a big pot, so it will be lunch (and dinner) again a few more times. It's good and spicy.

Sandwhich: Chicken breast, bacon, colby cheese, romain lettuce with honey mustard all on whole grain wheat.

Paired ( of course) with a large quality Orange.

Broccoli rabe, which I'm still learning how to make well (at once bitter and mushy - yay!) with homemade seitan in garlicky olive oil, balsamic vinegar, and pinenuts.

Lunch part 1 was leftover chili from dinner last night (from the America's Test Kitchen Family Cookbook - I highly recommend this recipe).

Lunch part 2 will be an Amy's frozen pizza shared with my husband and son.

Lunch--I hate to shock you, but it consisted of a hot dog on a white bun, packaged oatmeal-raisin cookies, Fritos, and a banana. School cafeteria fare.

Ate out. Had a tasty Tofu Rueben sandwich at the local vegetarian place (not a veggie, just taking it easy this week after having short ribs, beef stir fry, and a ribeye all this weekend. Time to give the heart a break) here in Athens, GA.

i was working home today, so i broiled a piece of fish and ate it with some raw spinach dressed in the champagne orange vinegar i just bought at la trader joe's. lest this meal seem too earnest, i also ate two chocolate-pecan turtles.

Red lentil soup (a Cooking Light recipe I think...), a salad with carrots & grape tomatoes with Ken's Pomegranate dressing (all the Ken's dressings are SO good).
