Any type of dry white wine should work, you don't have to spend a lot of money, say $5 to $7. Although you don't want to go too cheap, the cheaper the wine, the heavier the processing which leads to strange flavors and bad hangovers.
This valentines day I am shaving truffles over pasta and serving it with an incredible bottle of Barolo. The Barolo and Truffles being our mutual gift to each other. Yum.

We're eating in. We have a bottle of nice champagne we received as a wedding gift a few weeks ago, which may or may not be used in cocktails, and we'll start with a selection of cheeses and olives baked in red wine.
The main event will be pork loin stuffed with Armagnac-soaked prunes, celeriac puree, and haricots verts. And, of course, a bottle of red wine, something a little higher-end than what we normally drink.
Dessert will be something decadent from Baked - most likely their spicy chocolate brownies, topped with a little fresh whipped cream and a sprinkle of cayenne.

This is my first year alone in awhile so I'm eating alone. However, I'm having my nice Pinot Noir, a simple meal (not yet planned) and will make some calls to friends in California who are also alone. I've never been much on Valentine's Day because it seems to put much pressure on some people. I like a quiet evening. But Happy V Day to everyone!

I will be cooking and my sweetie will be contributing a very nice bottle of French Champagne. :)
I am thinking of starting with French 75 for cocktails with a couple gourgeres.
I am keeping the main course simple (it is a work night) - a nice beef fillet with a red wine reduction, a mushroom barley risotto and a crisp green salad. Have not picked out the wine yet.
Desert will be molten chocolate cake (from the Domestic Goddess's blog) with a creamy raspberry sauce --- mmmmmmmm.
Hope eveyone has a good Valentine's Day!!
We won't have to dress up (if we had been going out), and I can eat what I want, not something we will both enjoy (we have different taste in fine food, everyday food we match pretty close though).

We're going to Lady Mendl's Tea Salon on Irving! It's an elegant, extravagant four- or five-course tea service with wonderful tea sandwiches and scones. It was so delicious last time that for V-day I'm dragging Jeremy...do you remember that scene in "Goblet of Fire" (Harry Potter book 4) where Cho and Cedric go to the tea house in Hogsmeade for Valentine's Day, and there are real cherubs strung from the ceiling, painted gold and flapping around?
I'm hoping it will be like that. =)
Last year I made a lobster risotto and flourless chocolate cake for him, so I want this year off!

I was planning something sort of basic-- a salad with fennel, rack of lamb-- but with chocolate fondue for dessert. My grandmother just gave me a fondue pot and I thought this would be a great time to break it in. And fondue is very sexy... but alas... I gues we could do it another night.

Nigella's molten chocolate babycakes recipe divides into smaller portions really nicely -- we cut it in half for 4 cupcake sized babycakes a few days ago,
and 1/4 recipe would be just as easy - down to 1 egg and 3 oz of chocolate - for 2 servings
(or dinner and breakfast treats for one...I hate the couple pressure of Vday, and applaud the solo folks for not getting sick on the duofest)

last year, my roommate and i made heart shaped pizzas (out of biscuit dough. completely disgusting, don't try it). this year, we're having a themed dinner for friends, where we will serve red stripe bear, salad with HEARTS of palm and artichokes, and whatever other cheesy ideas we can come up with. this is definitely not going to be at all coordinated, but it should be a blast.
