Seasonal Recipe Spotlight: Mexican Food!

2007_05_04-Mexican.jpgCinco de Mayo is tomorrow and so it's a great excuse (we'll take any though, really) to make Mexican food! We'd like to take the chance to explore some more authentic Mexican recipes in our kitchen. But whether you're going the sophisticated Saveur route or sticking with Tex-Mex, cook something new this weekend!

Here's a few features and recipes on this ever-so-popular holiday excuse to break out the nachos. Epicurious sets the record straight on what Cinco de Mayo really is, and kicks things off with some recipes, including a Jicama-Melon Salad.

 
 

Southern Living makes some nice-looking fajitas, and the popularization of Mexican-ish food continues over at Food Network where Emeril's got Chorizo, Bean and Cheese Nachos.

For something a little more authentic, try making tortillas and huevos rancheros. We love the look of this dish with Cochinita pibil, guacamole and pickled red onions.

For sweets, don't forget about our Mexican Hot Chocolate. These Bunuelos with Orange Syrup look wonderful too, as does this Margarita Cheesecake.

Buen provecho!

The chilaquiles reciped linked above (via Epicurious) looks tasty -- this is one of my favorite mexican dishes, and down in Mexico, the leftovers are served in the morning topped with a fried egg -- and is reputed to be a great hangover cure!!!

Just buy coincidence (our subliminal forces), I have some beef marinating in the fridge for carne asada tonight (recipe from Santa Fe's Cafe Pasquale Cookbook). The weather is fine and the grill is getting fired up as soon as I get home. Time is of the essence though...there's hockey on tonight....Go Sabres! (Hockey & Cinco de Mayo DO go together...with enough beer!)

I have to make queso ("traditional"=velveeta plus rotel in the crock pot)! it's a tribute to my Mexican heritage and Texan family.
