My gig at DannonKitchen.com is almost over, although if readers are enjoying the cooking-with-yogurt theme, we can certainly keep it up. This week's recipe is a Creamy Curried Potato Soup, topped with rings of caramelized onions. Perfect for the chilly Ides of March.




Here's one vote to please continue the "cooking-with-yogurt theme"! I make home-made yogurt so it's always plentiful and I'd love to find more recipes that use it. Those muffins from last week were great!
i second that. or feature one ingredient per month to use in multiple recipes.
recipes using yogurt.
1)
Grated cucumber - 1/4 of a cup
Yogurt - 2 cups
roasted cumin - half teaspoon
salt and paprika to taste.
It tastes yum with roasted chicken.
2) Heat oil 1/2 teaspoon + mustard seeds ( 1/2 teaspoon) , cumin( 1/2 teaspoon), tomatoes ( 1 large tomatoe, asafoetida ( a pinch) , curry leaves ( will only find them in an indian store. generally used in south indian dishes). Add salt and paprika to taste
Switch off the stove and then add yogurt ( 2 cups)
Do not add the yogurt in the heated mixture otherwise it will curdle.
You can eat it with rice, roasted chicken, meat, mashed potatoes. Use can use it as gravy or as a dip if you puree the mixture.
i really like the feature too, especially after getting an earful about the need for calcium in my diet from my doc!
One ingredient per month sounds great to me too!
But, also, any low-fat high-calcium recipes to be thrown in at any time!!
How about a region, country or type of cooking every few months? don't know, just brainstorming.
