Lemon cucumbers are an American heirloom variety dating back to 1894. About the size of a tennis ball, they range in color from pale to lemon yellow to orange (lighter ones tend to have thinner, more edible peels). The first time we tried a lemon cucumber, it was from our mom's CSA in Texas; it was the sweetest, most refreshing cuke we'd ever tasted, and we couldn't stop thinking about it! We were delighted when we found them at our farmers' market and now look forward to their appearance every summer.
They're so refreshing that we often just snack on them like sliced fruit. In salads, we think their crisp sweetness pairs well with rich avocados. Last week, we combined chopped lemon cucumbers with avocados, cherry tomatoes, onions, olive oil, and apple cider vinegar, served over brown rice with lentils and apricots (substituting ripe Blenheims for the dried apricots in the recipe). We're also eyeing recipes for cucumber almond soup (served in cucumber bowls!) and agua fresca with cucumber and lime.

Aaaugh. I grew these last year and vowed never again. Maybe I didn't have a good variety, but mine had really tough skins and were rather difficult to peel. It seems like the regular green variety were made for easy peeling.

We peel these and use chunks of them in Indian dal and sambar dishes. I think you can also make them into curries too, much like squash.

My best friend and I ended up, of all places, in a Fresh Choice last night, to escape the heat. And what did we find there? Lemon cucumbers! They were fantastic on salad, and on the side dipped in ranch.
I found it very interesting that Fresh Choice now offers certain produce that's local, with accompanying signs.

Lemon cucumbers are heaven. We used to grow them when we had a garden and used a heirloom variety that had very tender skin.
However I bought some at the FM last week and they were very tough and I was very disappointed.
They also make good pickles :-)

Wow! I have never seen this. I love cucumbers. I have lived in many places all over the country and yet I see new things all the time since I became addicted to this site. I wish I loved near a farmer's market but alas here in mid America they are few and far between and extremely hard to find.

you can eat these raw. they are nice and a little sweeter than regular cucumbers.
