Warm Lentil Salad for a New Year

We agree with Gourmet Girl that lentil salad is a very good dish for the brand new year. She says that she is ready for spring and warm summer foods like corn and tomato salad, but there are months of cold winter left. Lentil dishes like her Lentil Salad with Goat Cheese and French Vinaigrette bridge that craving for lighter salads and grains - but in their own warm, cozy way.

This recipe reminds us of one we posted last fall, involving bacon, parsley and herbs...

 
 

Herbed Lentils with Bacon has a similar vinaigrette and is an easy, tasty weeknight dish. We also really like this recipe for Smashed Lentils with Egg, with egg oozing into little ramekins of spiced lentils. And if you want to work lentils into your appetizer lineup, try this Lentil and Yogurt Spread - also an excellent lunch.

I made your smashed lentils with egg (yum) a while back, but really overdid it on the lentils, so I used the leftovers in this salad from British chef Delia Smith: http://www.deliaonline.com/recipes/warm-lentil-salad-with-walnuts-and-goats-cheese,805,RC.html

The creamy goat cheese with the lentils, plus crunch from the walnuts and greens is an awesome combination!
