Tofu croutons is one of the (bizarre) things from How to Cook Everything Vegetarian that I've been meaning to try. The chickpea broth and seaweed mayo were really good, so I have high hopes for this.

Can't WAIT to try tofu croutons! My brain is popping with all sorts of ideas... (p.s. Spell check wants to change "croutons" to "moutons." That makes me chuckle."

I just made tofu croutons! And they're very good. I did half in a mixed vegetable oil (canola, corn, etc), half in extra virgin olive oil. Both are good; the olive oil was subtle but noticeable. I tried it with this spice grinder I have, garlic salt, and white pepper (ahem, out of black at the moment), all separately. They're all pretty good, and two of us will probably finish off the entire block of tofu shortly. I also chickened out and only baked them until the outsides were chewy to the point of a little crispy. The texture is similar to a tougher, crunchier aburaage, if you're familiar with that.

Maybe I'm just a weirdo, but we hardly ever use our microwave. We unplugged it one day during some housecleaning and didn't notice that we hadn't plugged it back in for over a week. Upon realizing that we weren't using the giant appliance in our kitchen with limited counter space we moved it into our storage room just off the kitchen. It's there if we need it, but not somewhere you can see it. NO fancy garage needed here.
