I did my own version a couple years ago for a few friends when our Turkey Day plans went haywire at last minute and it was damn good (if I do says so myself...). Turkey cutlets are an excelent substitution for a whole bird.

I think it can be fun to do a three day prep - but certainly not necessary.

I did this menu last T-day and it was a roaring success. The only thing that I added was a batch of mac and cheese because I am fairly southern. I am planning to do it again this year and it seriously only took an hour for turkey, cranberry sauce, stuffing, sweet potatoes and appetizers.
