Soup of the Day: Curried Sweet Potato Shooters

2009_02_17-SweetPotatoes.jpgSweet potato soup is a great way to start a meal. It fills you up, and its sweet warmth complements many winter dishes. We love these little soup shooters from Domino; we'd love a shot of this right now!

 
 

This recipe is also a good leftovers-buster: it was designed to use up leftover baked or mashed sweet potatoes. The curry is a good touch here; we find that sweet potatoes often benefit from a spicy or more heavily seasoned touch.

It's a pet peeve of mine when soup stands up like that: it shouldn't be so thick, especially if it's to be consumed in shot form (I can imagine the "soup" quite disgracefully plopping all over one's mouth).

I love soup served in tiny cups but I would never, ever call them, or anything else, "shooters". It sounds like something on an Appleby's "Apps and Starters!" menu.
