Make This: Savory Tomato Bread Pudding

2008_01_16-BreadPudding.jpgThis recipe for Savory Tomato Bread Pudding is from Top Chef's season 3, and it's a great example of how canned pantry staples can make a fresh, summery dish in the winter.

It takes tomato paste and cooks it with fresh red onion, basil, and thyme. Garlic and eggs round out a custard that's poured over good bread and baked for a delicious savory bread pudding.

This kind of meal is vegetarian and hearty so it can stand on its own, but it could also be a side in a larger menu. We would eat it either way...

Savory bread pudding is great! I often make one with chicken sausage, spinach or arugula, and artichoke hearts. It's an easy meal that uses up leftover bread... always handy.

I often make a "breakfast strata" with all kinds of leftovers- bread cubes, cooked vegetables, herbs held together with an egg custard.
