Goes Well With Coffee: Clotilde's Chocolate Bites

2008_02_07-Cake4.jpg

When we want to bake a chocolate treat quickly, or whip up a fast yet impressive dessert for friends, these Chocolate Chili Bites from Clotilde at Chocolate & Zucchini are always at the top of our list. They're an adaptation of her recipe for Melt-in-Your-Mouth Chocolate Cake.

The recipe is so easy! Melt butter and chocolate, stir in some eggs, sugar, and a tablespoon of flour, and pop in mini cups. Bake and serve. They're soft, warm, and utterly delicious. Click through to see how we dressed them up for our friend's wedding reception last February...

We baked these little chocolate cakes in miniature souffle cups, topped them with a garnish of stabilized whipped cream, and put a tiny homemade pastillage heart on top.

They were pretty and the bittersweet chocolate middles did indeed melt in your mouth, along with all that sweet and creamy whipped cream!

Faith - I have some chocolate discs I brought back from a recent trip to Guatemala. They are just like Mexican chocolates: dark, grainy sugar, hint of cinnamon. Think I can use it in the Choc Chili Bites recipe by obmitting the sugar? Thanks!

These are fantastic and so easy to make. I took them to an informal dinner party this weekend, and they were a huge hit.
