Emu, Turkey, and Turtle: A Dozen Eggs from Gourmet

2008_03_24-Eggs.jpgSo Easter is over, and you've wrapped up your Easter egg decorating. You're looking for ways to crack egg salad or something else delicious out of all those pink and green pastel shells. It's not a bad time to celebrate the egg, and boy, does Gourmet online have a treat for you.

Gourmet online has a wonderful slideshow of incredible edible eggs - all eggs that you may not know so much about. There's the rich, meaty duck egg; the big turkey egg; the emu egg (looking like a basalt carving); the tiny quail eggs, and eggs from the sea - seagulls, turtles, and fish all make an appearance.

Does anyone know if quail, ostrich or duck eggs are safe for people allergic to egg whites?

Nudik, I have no idea. I wonder if it would be much like the difference in being allergic to cow's milk, but not goat's...but I'm far from any expert that should be advising you.

I've had fish, chicken, and duck. The duck eggs were courtesy of a childhood pet, so I found it very hard to willingly eat them...but my mother snuck a few into our meals.

We use the araucana eggs.
