I just made dandelion jelly this past week
http://freedom.theswartfamily.com/2008/05/dandelion-jelly/

It is delicious, let me tell you, with almost a honey-ish flavour to it, very light and subtle.

For anyone who tries harvesting the dandelion petals, make sure you don't get the green part (it is very bitter). The easiest way I found was to break the flower in half and run my fingernail along the base of the petals to detach the petals from the sepal.

Also, be careful for those of you who have hayfever. I didn't have problems eating it, but after working bare-handed with the dandelion petals for an extended period of time I developed a contact dermatitis on my fingers.
