The ice cream? A spicy chai blend of green cardamom, cloves, and ginger. The wafers? Just chocolate. That's right - no cookie-baking required. Just warm up a little milk chocolate, dab onto parchment to create tiny circles, then let them harden into wafers.

This recipe is from pastry chef Emily Luchetti's book A Passion for Ice Cream. It seems very deserving of the title if this a representative recipe to be found inside this book.

The resulting sandwiches are so delicate and tiny you can eat them in one melting bite. The creaminess of the chocolate and cream pair well with the chai spices. Delicious!

I made some peach ice cream from this cookbook just the other day. The ice cream was great. I followed the recipe, although I added a shot of bourbon to keep the ice cream from getting too hard in the freezer.
