It's just getting hotter out, it seems, and even ice cream sounds too heavy. We want light, fruity cold things and these popsicles look like they'd hit the spot. We're curious about the texture - has anyone ever made Jello popsicles? (And can Fudgesicles be far behind? The nostalgia factor pretty high up there; our grandma always had those around...)

I've never made Jello popsicles but I swear by pudding pops!!! (and yogurt pops as well)
You can even get fancy with some of the different flavors of pudding, or what you mix with the pudding. Banana puree added to chocolate pudding is pretty tasty. My recent favorite has been making pudding with coconut milk. yum!

Pudding pops was what made me go out and buy a mold. I do have some gelatin mix...I should try this recipe.
