The DIY samoas are really, really good with a couple of changes...
Make them into bar cookies and save yourself a TON of work. Add more caramel and more coconut than the recipe calls for. Use a thinner bottom layer of the shortbread if you are making the bar cookies--there may be some shortbread leftover, but I'm sure you can find a use for it!

Can I ask a question? Why are these cookies called "Samoas"? I know "Samoa" as an island nation, not as a cookie?
