Despite the great-sounding cooked, smoked hams in this article, I still want to do a fresh pork leg "ham" for Xmas. But over at epicurious.com I saw a comment warning that baking a nonsmoked ham is not worth it. (I was going to use Julia Child's recipe in The Way to Cook.) Anyone have luck with doing ham from scratch?
