Would You Top Your Guacamole with Melted Cheese?

2009_06_29-guac.jpgInterestingly, the cheese in the photo is off to the side, contained in a little ramekin. Maybe the folks at Food & Wine thought it safer not to show melted cheese all over a bowl of guacamole? What do you think of this combination? Let us know, below...

 
 

There's nothing complicated about the recipe; it really is just a chunky, traditional guacamole with some microwaved Monterey Jack on top.

As far as pros, well, it's guacamole. With cheese. Two delicious things that can't possibly be bad together. The cons, in our opinion, would be that the hot cheese would take away from the bright, fresh flavors of avocado, cilantro, jalapeño, and lime. Also, we like our guacamole cold; we're not sure we'd appreciate the blending of textures and temperatures.

Jamie Oliver has a recipe where he bakes Cod with tomatoes, avocado and then tops with Jack cheese. Delicious and quick.

I don't think I would just add cheese to Guac though.

We just had a quick dinner of cold carved chicken, homemade guacamole, and homemade queso--pipping hot and spicy. We would put some guac, then a piece of chicken on a tortilla chip and top it with some queso. It was so good we made it another day! Next time we are going to stuff corn tortillas with salad greens before we add the rest. I think the key is to not put the cheese on the guac to begin with, but serve them side-by-side. They keep their respective temperatures and combine in the mouth to perfection.

We also love this yummy mixture: Greek yogurt that has chopped chipotles in adobo sauce, a pinch or two of kosher salt, and little squirts of agave until the mix is a tiny bit sweet. Delish! We put it on everything around here.

I've had guac that has shredded monterey jack mixed in, but not melted. It was good! But I generally prefer it plain. I don't think I'd like it melted.

Adding guacamole in your quesadilla (yes, inside the 'dilla and cooked that way) isn't a far-fetched thing in Southern California. But, outside of nachos, that's the only time I eat guac and cheese together; otherwise, it just seems a little too rich from the fats in both.

One of my favorite summer meals is avocado, baked with blue cheese and walnuts. It's simple and delicious.

Guacamole and queso is the best invention ever!!! Almost every Mexican restaurant in Texas offers it as alternative to ordinary queso. It's also good with ground beef...yum!

It's classic Tex-Mex to put a dollop of guacamole, a dollop of sour cream, a handful of onions, a dollop of refritos, and some ground sausage, then smother the whole business with queso.

if you live in, or have ever been to, or will ever come to austin, tx, be sure to stop in at magnolia cafe for mag mudhref> (a bowl of queso with an island of guacamole and pico de gallo and other goodies), or visit kerbey lane cafe for kerbey quesohref>, a similar and equally delicious concoction.

bottom line? guac cheese = sinfully delicious.

@allicoop86, so true. Most good Tex-Mex spots in Austin serves up queso with a dollop of guac & ground beef. Sounds odd, but it's completely delicious. The contrast between the cool guac & hot queso is really delightful.

Wow..my initial thought was that even though I love cheese and love guacamole, the two just wouldn't mesh. After reading these posts, now I'm not so sure of the mismatch. I'll have to try it!

This is a TexMex Legacy -

Matt's El Rancho in Austin -

In the late '60s or early '70s, former Texas Land Commissioner Bob Armstrong asked "Little Matt" to make an appetizer. He wanted "something not on the menu," Mr. Martinez recalled in the 2006 cookbook MexTex: Traditional Tex-Mex Taste.

So Mr. Martinez hurriedly mixed together some taco meat, guacamole and sour cream, pouring chile con queso over it and threw it in the oven.

Mr. Armstrong spread the word on how good the dish was, and the Bob Armstrong Dip became Mr. Martinez's most famous appetizer.

As stated above, my first thought was well this is just the beginnings of "Mag Mud" the famous dip at Magnolia's in Austin. YUM.

I agree w/all above, Mag Mud is yummy! I haven't been in a while, and I can't find it on their online menu, but my favorite was actually the Edward's queso. I seem to remember queso w/ loads of fresh pico ,avocado & other vegetables (squash, etc..)
Loved that stuff.

Austin has the queso/avocado thing down to a science. Besides the Kerby Queso, Kerby also has a dish called Eggs Francisco (english muffin, bacon, scrambled egg, slice of tomato & avocado slices all topped w/excellent queso in lieu of hollandaise) Would this kill you if you ate it on a day-to-day basis? Yes. It would probably be worth it, though.

Oh yeah, both Kerby and Magnolia are open 24/7 ( : I love Austin!

Ah! Queso on the side definitely. On top of the Guacamole absolutely not. I agree that it'd ruin the temperature, texture and flavor of both...unless you're going for sloppy Super Bowl style fare.

I wouldn't add cheese to guac, but I would add grated cheese to nachos first. Then dip the cheese covered nacho into the guac.
