Quick Lunch: Sweet Potato with Maple-Pecan-Shallot Butter

2008_10_14-sweetpotato.jpgOkay, so there's no protein to tide you over until dinner... But a baked sweet potato is one of our favorite quick, vegetarian meals. And the jazzed-up butter makes it so much more interesting.

The butter is a simple mixture of chopped pecans, shallots, and maple syrup—such a great combination of salty and sweet. We even think a little chopped bacon on top would fit right in and make it more filling.

Mmm, I love a sweet potato for lunch. I like to add a little salad of feta, red onion, olive oil, kalamata olives and red pepper flakes. The flavors are intense but just my style.

Switzerland just kills me -- yesterday I bought 2 (count 'em 2!!) sweet potatoes ('cos everything comes in itty bitty portions), and they cost (drumroll please....)....

$10!!!

-and no, they weren't even organic (actually, they were probably genetically modified, since Switzerland leads the way on GM foods).

One of my favorite restaurants changed owners and now I can't get the baked sweet potato with some kind of hot pepper that was super fabulous
