Look! Green Breadcrumbs in Elle Decor

We read Elle Decor for the home design, not Daniel Boulud's food column, but when flipping through this month's issue, we noticed these parsley and basil breadcrumbs dusted over his Cornish game hen.

They look crunchy and springy and seem like a great way to use up leftover bread and leftover herbs. Read on for a close-up...

2008_04_21-ElleDecor2.jpgObviously these aren't the breadcrumbs you mix into meatballs, but they would be a nice, gussied-up addition to some roasted asparagus, or a simple pasta dish. We could also see them scattered over some sautéed mushrooms or any type of gratin.

The recipe calls for white bread, a bunch of parsley and basil, and some melted butter whizzed together in a food processor. After reading this morning's NYC Greenmarket report, we're thinking they would be great tossed in pasta with some ramps. Just a little extra green... hey, tomorrow is Earth Day.

Try a piece of halibut lightly seared, then brushed with a mixture of butter and dijon then coated with these bread crumbs and baked.

The addition of mint to the herb mixture would add an interesting dimension.
