Outside food = grilling for a couple of the major food magazines this month. Both Gourmet and Saveur look at steak, grilling, and the art of the flame...
Gourmet kicks off the summer grilling season with The Skill of the Grill - some good basic tips for cooking over that flavorful fire. They also have a great interview with Jon Rowley on seafood, recipes for spice pastes, and a ketchup roundup. Only in the magazine: a look at the food of China's Yunnan province, and the story of what happens to a chicken in its journey from coop to pot.
Saveur is also talking about ketchup, and they also look at ice cream terms. But the real star of their June issue is steak.
They talk about steak in all its incarnations - including a very helpful forensic spread of 14 common cuts of steak, with explanations about where they come from and how to prepare them. They have their usual (wonderful) roundup of events and products from around the country and the world, including the most flaky ham biscuits we've ever seen. They also take trips to Southern Thailand and France. It's a good issue - check it out for the stories and the recipes!
