I was looking for a red snapper recipe after I brought some home from Trader Joe's. I found this one online from Paula Deen and it's so easy and so good that I've made it 3 times in the past couple of weeks.

Show: Paula's Home Cooking
Episode: Lighter Side

4 (8-ounce) red snapper fillets, about 1/2-inch thick
1 teaspoon salt
1/2 teaspoon pepper
1 cup chopped onions
1 green bell pepper, chopped
1/2 cup (1 stick) butter
1 tablespoon Worcestershire sauce
1 cup freshly grated Parmesan


Preheat oven to 350 degrees F.
Season the fish with the salt and pepper. Spread the onions and pepper in a 13 by 9-inch glass baking dish and place the fish on top. Dot the fish with butter. Sprinkle with a little Worcestershire sauce. Bake for 12 minutes, then baste fish with pan juices. Sprinkle the fish with Parmesan and then place under the broiler for about 2 minutes or until the cheese browns. To serve, spoon the vegetables over the fish.

PS - After trying the green peppers I used tomatoes instead. I like it much better with the tomatoes.

I sooo don't love the Martha Stewart show, but a hummingbird cake is a fabulous thing. I had to make one for g'friend's birthday a couple years ago and had never heard of the thing.
It's dense and moist, made with pineapple, chopped pecans, and coconut if I recall correctly. Iced with cream cheese frosting.

I watched Rachel Ray's show for the first (and last) time recently. She made a sesame Thai noodle dish with peanut butter and spaghetti pasta. Ugh!

I also caught Nigella's Feast and she made "Blood and Guts Potatoes" which were mashed potato stuffed skins covered in catsup. Double ugh!

I am too scared to watch Semi-Homemade cooking with Sandra Lee...
