Beets have a natural sweetness; in fact, most of the sugar we eat in the United States comes from sugar beets, as opposed to sugarcane. That natural sweetness and and rich flavor is used in this recipe from Thomas Keller, made and photographed here for the blog of the White on Rice Couple, Todd and Diane.
They made the ice cream from beautiful baby beets from their garden, and they served it with candied walnuts and walnut syrup. This is a classic flavor combination - beets and walnuts often show up together in salads, but in dessert? Wow!
As you know, we're crazy about homemade ice cream, and our ice cream maker has already made an appearance this season, with mint Oreo ice cream and mango ginger frozen yogurt. This looks absolutely delicious. I just got engaged (!!) and this just convinced me that I definitely need to register for an ice cream maker.
It would go really well scooped on top of a warm beet (or carrot or zucchini) cupcake.
