i've done wings both ways and while I like the baked version (tossed in a little flour before baking) DH prefers them fried (also tossed with a little flour before frying).
Wings are wings and honestly, they are good any way you serve them up.

A good wing should be crispy (not soggy), and the meat should pull easily off the bone.
The *best* way I've found to do this is to steam the wings for 10-12 minutes, then pat dry, and leave in the fridge, uncovered, for 2 hours to dry. Afterwards, I pat them dry again (sometimes they have gelatin form) and lay them on a baking sheet lined with parchment paper and put them in a preheated 425-degree oven for 35-40 minutes, turning them over half-way through cooking. Remove wings and toss with your favorite sauce, and serve with blue cheese.
I guarantee that they will be perfect every time, and they don't require flour or frying.

I don't know if it's cleanliness or laziness or what, but I hate the 'wing' part of chicken wings!
I'll take a breaded chicken breast with a side of wing sauce ANYDAY. om nom nom.
