I love finding good substitutes for things--in this case, I'm reminded that when I can't get chevre right away, I can turn to cream cheese or mascarpone: http://sustainablediet.blogspot.com/2009/06/carrot-cupcakes-with-twist.html

But the goat cheese icing sounds divine... who needs the cupcake!?
