Yazbek Tabouli
(As told by Mrs. Yazbek to her daughters.)
2 bunches parsley, chopped
1 bunch green onions, chopped
2 large tomatoes, chopped
1/4 cup Bulgur, rinsed
1/4 cup olive oil
Less than 1/4 cup lemon juice
Salt, pepper and cinnamon to taste
Mix all together, and adjust spices and lemon juice to taste. (Tastes even better the next day.)
