What's Cooking This Weekend?
Weekend of October 11-12

2008_10_10-Cooking.jpgOur fridge is bursting with potential for good cooking this weekend! We have a big bag of yellow wax beans, begging to be eaten. We have an extra head of fennel and plenty of squash - big butternut, little acorn and yellow-striped delicata.

What's waiting to be used up in your fridge this weekend? Here are a few ideas for the weekend from The Kitchn. What's cooking in your kitchen?

 
 

Do you have plans to do any of these things this weekend? No? Why not try for one, or something else in the kitchen. What are your plans for your food this weekend?

• Bake a noodle casserole.

• Make a great sandwich.

• Pick a few fall vegetables and roast them with some cheese.

Eat oatmeal for breakfast.

Bake copycat Girl Scout cookies - Samoas!

• Win a knife rack.

Whip up a simple bowl of soup.

Look for fall apples.

Take a trip to the country and find a farmstand.

I'm going to try the Fast No-Knead Whole Wheat bread...we'll see! I'm a little dubious, but it's worth a try...

We're El Broko this weekend so it's all cooking at home.

Breakfast:
Huevos rancheros - corn tortillas, TJs turkey chili, melted pepper jack, fried eggs, dollop of plain Greek yogurt, cilantro and lime. OR the yogurt with cut-up mangoes, granola and a glub of maple syrup.

Lunch/snack:
Tomato, avacado and goat cheese on fresh sourdough. With TJs butternut squash soup and corn chips made from the fresh tortillas.

Dinner:
Artichoke heart/red onion/garlic/olive oil/rosemary whole wheat angel hair pasta with parm. OR sole fillets lightly dredged in flour and fried with butter and white wine, topped with capers, and dry-fried collard greens with garlic.

LATE NIGHT DRUNK MEAL: In-N-Out burgers ANIMAL STYLE!

My mother in law is visiting so last night it was chicken thighs w/orzo, lemons, and kalamta olives along with a heirloom tomato salad w/feta, cukes and red onions (yes, a little greek theme going on). Desert was spicy pumpkin cake w/honey cream cheese frosting that I made the night before and breakfast this morning is a casserole that I prepped last night and it's been sitting in the fridge: stale bread, turkey breakfast sausage, cheddar cheese and eggs along w/a fruit salad and plenty of strong coffee. Like mgood, I also plan on trying Bittman's latest no-knead bread.

Chicken enchiladas with Hatch green chiles and Hatch green chile sauce. Filling is chicken, scallions, Hatch chiles, cilantro, and a bit of cumin. It's placed into corn tortillas that are folded over, rather than rolled. We get more filling that way. I love enchiladas prepared the traditional way, dipping corn tortillas into hot lard, then into hot sauce before being filled, but it is messy and not as heart-healthy. So I warm each tortilla in the microwave for 15 seconds, place it on a lightly sauced board, then fill and fold. I put them on a greased cookie sheet and freeze them solid before packing them into plastic freezer cartons. I take them out as needed and sauce and bake. We are eating them accompanied by a salad of CSA lettuces and tomatoes, dressed with a chile flavored vinaigrette.

This light dinner is to make up for the 3 gallons (yes, gallons!) of popcorn Bulldog made us after a pizza we wolfed down.

Lasagne from this week's Recipe for Health at NYtimes.com, w/ local chard, pasta, and to make it not so vegetarian, a few sausages from a local guy at the market. It's all put together and waiting to be baked for a late dinner tonight, to be served w/ roasted garlic, bread, salad. Also baked a loaf of banana bread (long overdue) that has turned out perfectly (if I do say so myself). I have had a hard time getting it done just right, without drying it out. Mmmm. Good food weekend!

Rosebud, or anyone—have you had success with the faster Bittman bread? I tried the whole wheat recipe and it just didn't work...yeasty, dense, etc. Not sure why I failed.

We're having friends over for a little pumpkin carving party. I am making pulled pork sandwiches and blondies ( the hubbies favorite) for dessert.

It's Thanksgiving here in Canada, but we're foregoing the big dinner and skipping ahead to leftovers: turkey pot pie! And for dessert, homemade pumpkin ice cream with warm gingerbread. Woo!

Cooking a turkey tomorrow (monday) complete with all the trimmings: Stuffing, gravy, mashed potatoes, brussel sprouts, asparagus, carrots, holubsti (Ukranian cabbage rolls), and my first batch of No-Knead bread (slow version)

It'll be a good dinner!
