Since your post on Pinot Grigio, http://www.thekitchn.com/thekitchn/wine/how-to-choose-good-cheap-wine-from-the-big-brands-pinot-grigio-057483 I'd been thinking about the bottle of Santa Margharita we have, so I used that as the poaching wine for the cod in Bittman's dish, and we drank the rest. Served it with Sesame Green Beans and Garlic Roasted Potatoes.

Sorry guys - had no idea that casserole would prompt so much interest! It was just an improvised veggie gratin - no recipe really needed.
I just cut up some summer veggies - tomatoes, garlic, zucchini and squash, tossed with olive oil and salt and pepper, and scattered in a few chunks of whole milk mozzarella. Then I topped with an even mixture of Parmesan and breadcrumbs (about half cup each) and baked at 350 for 45 minutes or until the top browned.
It was yummy - I ate it for dinner all last week!
