What's cooking this weekend? Are you staying cool? Going out? Cooking in? What's in the kitchen, and what's on the grill this weekend? Do you have plans to escape the heat with a tall cold drink? As you plan your weekend in the kitchen, here are a few ideas for things to cook and eat from The Kitchn's past week.
I'm thinking about a glass of cold dry sherry (so refreshing in the summertime!) and something Spanish, like the little plate of paprika-dusted potatoes above. What about you? What are you thinking of eating this weekend?

I love these posts! When we're in town, I usually make a tuna casserole for my husband to munch on all weekend (and usually have for one dinner too) and a quiche for myself. I just took the cheese and bacon out of the freezer for my quiche! I'm grooving on using up my food in my freezer and cupboard and having a clean slate for fall. Now that I work for a school, the new year always feels like it starts in September rather than January.

Today I made a pot of Citrusy Spicy Black Beans from the Simply Recipes site and had those on tortillas with burrito toppings.
It's four days until the county fair and my kids are busy practicing foods projects. Fudge and chocolate peanut butter truffles tonight, quick breads and one other candy (maybe hard candy?) tomorrow.
I wish now I'd cooked up meals for the freezer so we'd have good meals ready in the midst of the chaos.

Since I was planning to have a chill evening, made a mound of Linguine with Lemon, Garlic, Thyme and Mushrooms, which I saw Nigella whipping it up in no time on Nigella Express. It was simple, easy, yet extremely tasty!

We had grilled pizza tonight, just tomato, mozzarella, and basil. Tomorrow I'm making my version of pork banh mi--grilled pork marinated in lemongrass, chiles, garlic, and fish sauce, sliced and stuffed into a baguette, topped with cilantro, pickled carrots and onions, sliced jalapenos, and a wee bit of mayonnaise.
I'm also going to make some zucchini and parmesan muffins, and maybe a batch of refrigerator pickles. Have a great weekend everyone!

I was on a business trip the last 3 days to NY and Ch'icago so I'm making up for it with quite a bit of cooking today. Tonight's dinner is lemon and oregano marinated chicken drumsticks with grilled zucchini and grilled potatoes. For desert I made some peanut butter bars to be topped with some strawberries and homemade freezer jam. Tomorrow will be the fish we pick up from the farmer's market and whatever else looks good. Oh, and I also made some lemony chickpea spread that I've been munching on w/some Ak-Maks and a cool glass of rose.

I went with the potato salad recipe from Homesick Texan's blog, some locally baked bread, and some farmers market plums for a picnic in Boston Common! The potato salad was a hit!
