What's Cooking This Weekend?
Weekend of February 6-7, 2010

2010_02_05-Kneading.jpgWhat's cooking this weekend? Are you staying in the kitchen this weekend? We are, since we are apparently in the path of a serious snowstorm. We're thinking about baking bread and cooking brunch. What about you? Have any of our how to tutorials this week inspired you to try something new this weekend?

The photo above is a sneak peek of some video and new tutorials we have coming your way next week! Meanwhile, here's a look back at some posts and recipes you may have missed from the past week at The Kitchn.

Homemade cough drops for cold and flu season.

• Kitchens we liked (and noted) this week: A happy, serene kitchen, a DIY kitchen from Gretchen and Rachel, James' tiny San Francisco kitchen, and a warm kitchen with wood floors and countertops.

• Why hardboiled eggs are so hard to peel.

• Looking for Super Bowl recipes? Try these dips and spreads.

• Some of our new tutorials: How to... make scallion pancakes, choose and use lemongrass, taste wine, clean tough burnt-on stains off a pan and make perfect bacon.

• Great ideas for cooking with kids: Toaster pancakes, and make a special drawer for your kids' kitchen stuff.

• Looking forward to Valentine's? How about red velvet cake or cupcakes?

• Did you get a chance to tell us about the recipes you want to make this month?

Dramatic kitchen improvements - great inspiration!

• What is the best way to cook a chicken?

• And finally, two recipes for weekend baking: Multi-Grain Peasant Bread, no-knead style, and a free-form apple tart.

Have a great weekend everybody!

Your chicken in a pot w/ milk recipe got me interested, so i read through the comments and then decided to try the zuni style first. At the farmers market last night i bought Maurice, a chicken who i was assured lived a good life. I prepped the chiken following the AP post, so I hope it turns out good!
I'm also planning on making choco chip cookies this weekend, but i want to make my own choco chips out of Mexican chocolate -- so i hope that works out.

On the menu for this weekend:

1. Molly Wizenberg's sweet potato biscuits w/ham and mustard

2. Chicken Piccata from Barefoot Contessa At Home

3. A buttermilk cheese from your feature earlier in the week. Might add lemon rind, thyme and black pepper.

Chicken in Milk, roast potatoes (British Style) and sauteed kale tonight. Nieman Marcus white bean/chicken chili with leftover chicken. Going to make some superbowl classics such as 7 layer dip and wings on Sunday. Also have lots of beans so maybe some black beans in my slow cooker with a ham hock.

We're snowed in this weekend, so I'll be making a big pot of roasted red pepper soup to be served along side a no-knead bread loaf (I've joined the dark side - I just love the bread it produces). I've also got tons of taters so we might just have rosemary taters with our eggs in the morning. Not sure what else. I might bake up some cookies or a cake.

Yes! I went out and stocked up for all my Valentine baking projects in preparation for the impending snurricane. I figure I may as well get something done while I sip my hot chocolate on a stick (that is, after I make those first!).

Hmm. Not sure this weekend. I kind of want to cook boeuf bourguignon again but I have 2 papers to write and that takes up a lot of time. I made croissants and pain au chocolate last night for the first time ever (and they turned out AMAZING if I do say so myself lol). Maybe just a chicken stirfry or Tikka Masala on Thai or Basmati rice?

@SydneyBristow, you'll love the Zuni Chicken! Best chicken ever, completely worth the mess it makes in the oven. :-)

Having my partner's bday party catered tomorrow night; I just don't have the time/space to put together a huge dinner. Sunday I'm making chili and cornbread, though I doubt we'll watch the Superbowl!

Probably these cilantro succotash quesadillas for Superbowl not-watching. And maybe I'll give deviled eggs another shot, now that I know I don't have to wage a war to peel each one.

- roasted red pepper & white bean dip and homemade crackers, for my partner to take to his dad's for Superbowl Sunday.
- buttery tomato sauce with white wine, some to eat and some to freeze.
- roasted broccoli, to serve over polenta with the tomato sauce.
- glazed almonds with smoked paprika, to keep on hand in the pantry. Some friends dropped by this evening, and I was startled to find I had nothing to serve them with an impromptu glass of wine. A dish of nuts would have been perfect.
- pizza dough, to restock the freezer. Our traditional Valentine's dinner is homemade pizza; making the dough now means less work (and more smooching) next weekend.
- fudge, to stash away in a tin for Valentine's Day.

I've been craving muffins all week so I plan to make a batch of Stonyfield's strawberry muffin recipe and freeze half of them.

I also want to try making my own jalapeno & cheddar turkey sliders with home made slider buns. I figured I could just take a hamburger bun recipe and make them smaller. We'll see how it works out in the end. I plan on using King Aruthur Flour's cheeseburger bun recipe to make the buns.

I am defrosting items previously made: chili, white bean soup, prob some pizza dough. That will help with 2 problems- freeing up some freezer space (yea!) and most importantly, allow me time on the couch since I have a bad cold & don't feel like cooking. Though I did make chicken stock tonight & will also make pancakes tomorrow morning.

i'm not doing much cooking this weekend...we had to put our 14 year old dog down today so me nor my husband aren't in the mood for much.

But we are still planning to go to a friend's house on sunday for the big game and i'm debating on what to make. I've seen a large number of blog posts about wings and i'm kind of craving them now.

also, i'll probably make some kind of veggie dip (hummus or white bean ) to munch on with veggies so I don't feel so guilty eating all the other fatty superbowl treats.

i've seen a few blogs about bread baking it's peaked my interest...i might give that a try soon.

I'm testing recipes for my menu project (pastry school). I have to create a dessert menu. My concept/theme is comfort/fun/childhood faves-with-a twist.....any ideas? it doesn't have to be a childhood sweet favorite either-i want to know what is an absolute taste memory trip for people, even if it's savory. What sounds like the most comforting thing in the world, especially with a winter storm brewing? What would you give in to, no matter your current food-related beliefs?

Tomorrow I might try making my own corn tortillas for fish tacos (we have an abundance of cabbage). And maybe a cake since my new baking book arrived!

For Sunday, I am taking coleslaw and a lemon tart to a Superbowl party.

I made red velvet whoopie pies last night to send out to friends and family for V-day. Today I'm making chocolate chip cookie dough truffles (also to send, hopefully), classic chocolate chip cookies, and the brie-style mac'n'cheese from earlier this week (last week?). Tomorrow is a classic: meatloaf, potatoes, and spinach salad.

Maybe we'll be dug out by Monday? But it's pretty much snowpocolypse here this weekend!

Keeping it simple this weekend as I'll be doing a lot of cooking with my 4-year-old as it's too nasty to play outside. A pot of her favorite red-lentil soup, a loaf of her favorite strawberry bread (she has rebelled against seasonality and pointed out that we can jolly well use frozen strawberries because right now "everything is frozen"), and a big batch of her favorite fried rice are all on the agenda.

I never did get around to carmelizing onions last weekend. Maybe tomorrow, if I wake up early and prepared to face all that slicing (and the complaining from husband and child of onion fumes).

Also chicken braised with chestnuts and some HK classics, roast pork buns, curry beef buns, and I'm very excited to try making pineapple buns. I love the crunchy topping, it's my favorite.

And chili, of course.

I am in the big storm, and this has been a no-knead, breadbaking weekend. I bought the Healthy Breads for Five Minutes a Day book and made the Banana Bread dough last night (dispatching a week's worth of bananas not eaten). I baked half this morning, and still have dough in the fridge for another loaf Thursday or Friday.

Right now I have no-knead multi-grain peasant bread rising (recipe from The Kitchn). Since that takes eight hours, I will bake a loaf in the morning. I had planned to make a big pot of Portuguese Kale soup, but banana bread and salad is the menu du jour. I will make the soup tomorrow when the sun is back out, and the multi-grain bread is baked.

Last night I finally used my mandoline to make a sort of scalloped potatoes with cilantro and bacon.

Not sure when to make tonight. Tempted to make chili but my mom is visiting next weekend and promised me some she had made and frozen. Since my plan was to use that recipe, it seems silly to not just wait until next weekend. So may use that ground beef to make bolognese.

My plan had also been to make pizza from scratch but the snow storm took over my grocery store and I couldn't get anyone to help me find the yeast. So have focaccia pizza to make.

Today I made one white boule, three loaves of baguette, and two pizzas (one with red sauce and cheddar cheese, and one with just pesto - that was more of a flatbread since it didn't have cheese).

Tomorrow I might make a banana bread (I have some brown bananas to use), a fruit smoothie, and some cookies. I probably don't NEED to make the cookies, but there's something about being snowed in that says cookies to me. We have 2 feet on the ground!
