2009_08_21-Cooking.jpgHappy weekend! What's cooking in your kitchen? A batch of ice cream, maybe to be topped with berries in port, like the sundae above? It's definitely weather for eating ice cream outdoors. Or perhaps you're cooking up salads and frosty, fizzy cocktails? Read on for many recipes and good tips for weekend eating, and tell us what you're cooking this weekend too!

 
 

• New recipes and recipe reviews: Southern cheese straws, easy salsa, barbecue chicken and macaroni salad, cold yogurt soup, chocolate mousse with olive oil and sea salt, cool bean salad with goat cheese, a tomato soup from Jamie Oliver, homemade potato chips, pickled red onions, and cappuccino of tomatoes and mozzarella.

• There were so many great recipes for ice cream and frozen treats this week! Try one of these this weekend: Hibiscus Berry Sundae, dairy-free avocado ice cream from Rick Bayless, an easy ice cream with just a couple ingredients, another one that calls for just one ingredient and a blender, and a sweet dessert wine ice cream.

I only wish it were that easy! We did a contest on our blog where we have to cook from other people's shopping bags (http://www.biggirlssmallkitchen.com/2009/08/whats-in-bag-we-have-banner.html) and so I have no idea exactly what dish will come of it. Here's hoping something from the above will fit our needs!

I'm baking super-sized macaroons, blueberry-raspberry muffins to be served with creme fraiche for breakfast, and we'll also be having lobster sauteed over linguini at some point this weekend with a huge salad that includes marigold blossoms.

Eggplant, heirloom tomato and goat cheese "stacks" for dinner tonight and I've already baked some blueberry oat scones this evening for breakfast tomorrow morning. I'm attending a bbq potluck tomorrow so I'll be making/bringing shrimp orzo pasta salad.

My usual greens (today, arugula) & poached egg for lunch, with some strawberries & yogurt for after.

I'm going to try that Rick Bayless horchata recipe, and prob make some ricotta for pizza tomorrow (with the rest of the arugula). It's so humid and unpleasant right now it's hard to think about cooking. The neighborhood restaurants will do well out of me until the weather breaks.

Right now I am making homemade guacamole and enchiladas verdes de pollo with tomatillo sauce and queso fresco.

I will also throw together some sliced fruit I have to make a mexican fruit salad with a sweet-spicy-salty spice blend to top it. (it's made of sugar, salt, lime juice, and chili powder. Delicious on ripe cantaloupe, watermelon or just about any fruit salad.)

I am also considering doing tequila partida margaritas with agave nectar... we'll see :)

Pasta salad on Friday night.

It's been cooler here this week so I took a turkey breast out of the freezer and did that up last night with smashed potatoes, gravy, and graham bread. I shredded the other half to make Italian turkey for sandwiches for this week or maybe for the freezer.

snowhite, how do you make your enchiladas? I never have found a recipe my family likes and I've tried a bunch.

I've tried my best to keep the oven and stove off this weekend - Friday night was shrimp ceviche w/ popcorn, and last night was tofu salad with a creamy miso dressing. Check out both plates at:

I was so excited to see Gravenstein apples at the farmer's market this weekend. I ended up making two apple galettes and two apple and walnut cakes with maple frosting. Now I just need to find some eaters. :-)
