The one leftover from Thanksgiving that we really treasure is a big bag of turkey stock. We made braised turkey, just cooking the legs, thighs, and breast. This left a hulking chest for broth, which simmered merrily away while the rest of our dinner cooked. Now we have over a gallon of turkey stock, and the prospect of soup gleams bright. Here are eight soups that would be wonderful with turkey stock or broth.
These are all soups that either call for turkey broth or would be particularly good with its meaty, intensely flavorful taste.
• 1 Hot and Sour Mushroom, Cabbage, and Rice Soup - This is the one I'm making! Hot peppers, sour lime juice, savory turkey broth, with soft bits of rice and tender cabbage — this is a winter addiction for me and my husband.
• 2 Hot & Sour Soup - So Easy! - Another recipe for Hot and Sour Soup, but a little more authentic to what you'd find in a Chinese restaurant.
• 3 Italian Escarole Soup - This hearty soup includes turkey meatballs, so it only makes sense to use turkey broth.
• 4 Mexican Chicken Soup - The savory depth of turkey broth would work very well in this soup.
• 5 Easy Turkey Tortilla Soup - Another soup that relies on some lime juice for zing.
• 6 Ajiaco (Chicken and Potato) Soup - A traditional Colombian soup made from chicken and potatoes, but also fabulous with turkey.
• 7 Easy Kale Soup for One (or Two) - Simple, healthy, easy, and delicious.
• 8 Mushroom Soup - Savory and umami-laden, especially when made with turkey broth.

Last night I made turkey chowder- turkey stock, turkey, cubed sweet potato, chopped onion, sage, thyme & 1/2 & 1/2. What allegedly makes for 6 only fed my family of 4 with nary a drop left. And my kids are 3 & 5! That soup is so delicious.... I will be making again soon!

The soup you're making looks and sounds amazing -- and right up my alley. I love that it's gluten-free and can be made vegetarian as well (and is relatively inexpensive to prepare!) Will definitely be making this in the future.
Mostly I use the turkey stock to lend flavour to rice. Great ideas!

I made turkey and sausage gumbo with the stock. But my success came with a turkey pot pie, made last night. This site linked to the Martha Stewart pie dough (pate brisse ?) and it was wonderful. Hubby, who sticks his nose up at pot pies, asked for seconds. Thanks to "the kitchen" for wonderful ideas, recipes and pictures.

We quickly made stock the day after Thanksgiving and some creamy turkey wild rice soup that night.
Last night a carrot ginger soup recipe I like adapted very well to using up the leftover seasoned sweet potato mash. All it took was some of the turkey stock, shallots, cream, and lots of fresh ginger and voila, soup! It went particularly well with Faith's mom's famous potato rolls. (Those are delicious, thanks again for that recipe!)
Steamed sticky rice with turkey, lop cheung, and shrimp is on the boards to use up the rest of that broth and the little bit of turkey we've got left.
