I don't particularly care for pie but my mom's apple pie filling (made from scratch and canned) is to die for! And that lavender-blueberry pie is tempting. It's so pretty!

I made the lavender blueberry. Too much custard. I liked the idea of the lavender custard but in reality didn't do much for me so I decided it wasn't worth the work.

My two faves are
1) Amanda Hesser's grandmother's blueberry pie - it has a scrumptious cream cheese filling underneath the berry topping. Also you cook the filling and pie shell separately so the berries are all plump and shiny instead of looking kind of wrinkled and foamy like in the above photo.
AND
2) Peach caramel pie from Bon Appetit:

It's the best peach pie I've ever eaten.

I use Rose Levy Berenbaum's pie crust recipe for everything. Her secrets are, butter, cream cheese, and apple cider vinegar.

Oh also I love cherry pie but I haven't found the perfect recipe yet. I'm somewhat challenged by the fact that the sour cherries normally used in pie are not readily available at my grocery stores.
