Here's one more indulgence to whip up for breakfast this weekend—a creamy, sweet, pink strawberry butter that tastes amazing on biscuits, muffins, scones, or a simple piece of toast. If your strawberries are getting soft, it's a good way to use them up...
A restaurant in our hometown always serves strawberry butter with popovers, and we have to say, that's one of our favorite combinations. But it's versatile. You can really put it on anything.
Strawberry butter is no more difficult to make than a basic herb butter. Mash your strawberries, maybe add a bit of sugar if you want the butter to be sweet, and mix with softened butter until fully combined and beautifully pink. You can then form it into a log, rolled in plastic wrap or waxed paper.

oh man...I used to work at the restaurant in Neiman Marcus and they would serve popovers and strawberry butter. So yummy. I may just have to try this recipe.

I used to make a blueberry honey butter that was pretty awesome; and I totally forgot about it until I saw this post! It was a recipe from Food Network, but I don't remember who the chef was. Such a great way to extend your summer berries - just freeze the butter!

I've been focused on all things strawberry too. My current biscuit/scone topping has been super yummy sun-dried strawberry preserves:
