How about Christmas/Holiday menus? (Not too complicated, please!)

I'd like to see something festive and wintery, but still reasonably light and healthy--a nice little "break" before all the rich food I'm going to be eating later in the month :)

how about a nice spiced wine?
I've had it at Scandnavian homes, but never made it myself.

and thinking about holiday drinks,
maybe Cocito (the Puerto Rican eggnog) or
Punch Coco, the French Carribbean version

I would welcome some hors d'oeuvre-y things to have with drinks before dinner or in the late evening (say, on New Years' Eve)... festive and intersting, but not filling like the usual cheese and crackers.

I'd like to know how Jacques Torres does the Wicked version with chiles, without actually f*cking up a bunch of batches of it myself experimenting....

I'd love to see some simple dinner recipes for busy weeknights, which having on hand would prevent ordering in/eating out. If they make enough for lunch leftovers the next day, all the better, because I'm sick of turkey sandwiches/trader joe's frozen items.

I'll also second hot chocolate, as I'm planning a holiday brunch party.
