Recipe Roundup: Stuffed 8-Ball Zucchini

2009_07_20-eightball.jpgOn Friday we showed you some squatty, round, "8-ball" zucchini we saw at the farmers' market. The sign read, "Good for stuffing," lo and behold, there are lots of good recipes to prove it. We'll be going back form some 8-balls this week...

 
 

We love stuffing peppers, which lend themselves so well to the process, being virtually hollow to begin with. But we'll stuff any vegetable: artichokes, tomatoes, squash, eggplant.

The stuffing can have meat in it or be vegetarian, and we think a stuffed vegetable always makes a nice presentation. Everyone gets his or her own edible vessel, brimming with good stuff.

These 8-ball zucchini are new to us, but we know many of you are growing them in your gardens. Whether you're harvesting your own or buying them at the market, here's some stuffing inspiration:

these are great stuffed with sauteed onions, goat cheese and a bit of curry powder.

Last Sunday, I stuffed some with a corn custard and topped with lots of cheese. They turned out good, but think this is more of a brunch vs. dinner dish:

I think "8-ball zucchini" is another name for Rond de Nice squash, isn't it? That's the variety I *thought* I planted in my garden this spring, but now I'm getting the same shape squash just in yellow. Here's a photo and info on how I stuffed mine:
