Recipe Roundup: Potato Salads with Bacon

2008_07_03-baconpotatosalad.jpgWith apologies to our vegetarian friends, this has to be our favorite way to make potato salad. If it has hard-boiled eggs in it, too, all the better.

Classic German potato salads have bacon in them, usually with mustard, but our favorites still have a creamy mayonnaise dressing or else a simple vinaigrette. The saltiness and chewiness of bacon next to buttery potatoes is just too good.

While we know plenty of people who aren't fans of hard-boiled eggs, we think the bacon-egg combination is delicious. Some of the recipes below have eggs, others don't.

This type of potato salad is definitely not a light dish. It's meaty and dense and full of big flavors. And leftovers are perfect for breakfast the next morning...

That Texas Country Potato Salad recipe is way too fancy to be considered "Texas Country". The traditional Texas potato salad (potatos, mustard, mayo, relish/pickles, eggs, onion, pinch of paprika) would never use dijon mustard, only French's yellow (unless you are a Texan of German descent, and then you probably wouldn't put any mustard in it at all).

Okay, so I just noticed that this recipe is from Tom Perini of the famed Perini Ranch in Buffalo Gap; so I'll concede that it does indeed qualify as Texan. However, this recipe would better be deemed "Texas Ranch Gourmet Potato Salad". But who's quibbling?

I wish i had read this sooner. I didn't realize all german potato salad automatically had bacon in it and recently ordered some from the deli to bring along on a rafting trip. As a vegetarian, I took one bite, and had to give the rest away. Rrrrr.

Apology accepted. As a vegetarian who has lived in Germany, I know they sneak bacon into everything, including bread. What could be safer than bread?! But when my roommate's mom and sister came to visit they made the best vegetarian potato salad. Red potatoes diced and boiled, dressed with oil and vinegar and salt and pepper. Just add as much vinegar as you think you can stand and then add more. Let it sit in the fridge for a few days, and prepare to be amazed. In Pennsylvania, where I'm from, potato salad always has a mayo base, but in my experience that is not the case in Germany. Now I always make this recipe for the 4th of July. My dad even eats it out of the bowl like cookie dough.

I made chunky potato salad one time and my husband went into shock. We almost needed marriage counseling. We are definitely from the creamy branch of potato salad. I use a potato ricer to get the texture just right.
