I just made Melissa Clark's broccoli & shrimp tonight- requires just one pan, and about 30 minutes or less (depending on whether or not you make the rice). It's totally satisfying, easy to make, and healthy. great for a weeknight!

Honestly, most of the above ideas seem like they would leave me starving. Celery soup? Even a big bowl wouldn't fill me (or my family) for lunch, let alone dinner. The ideas look delicious, but would need to be a part of the dinner to get a complete meal. Admittedly, my name is tallsarah, so I need to eat a pretty big amount!
