Pancake Roundup: Recipes, Tips, and Products

I started thinking about this delightful food and realized how much my pancake memories are tied to family and friends – giggly slumber party mornings in friends' kitchens, the happy surprise when Mom served breakfast for dinner, and the imperfect yet never more satisfying flapjacks cooked over a campfire with my boyfriend. Pancakes needn't be ruled out for everyday breakfasts, but there does seem to be something special about them.

My husband has always told me about these pancake omelets that he had in Amsterdam years ago. I tried them for Christmas breakfast this year. You make all the toppings for omelets (mushrooms, peppers, sausage, etc.), but use pancake batter instead of eggs. Top it off with warmed maple syrup!

I love pancakes for upper but I never know what to serve with them to round out the meal. Specifically, fruits and/or veg.

I'm looking for a good pancake 'pre-mix' recipe. (eg: the dry ingredients so that I can just add an egg, milk, oil, etc. Can someone suggest one? Thanks!

Your posts are always so timely. I rarely make pancakes but I did this weekend. I used Hannah's Pancake recipe from Epicurious and they were awesome. I like the idea above of the savory breakfast pancake!

I offered a pancake breakfast to my family this morning in honor of Mardi Gras (husband out tonight) and they PASSED. My 3-year-old barked at me, "It's TUESDAY, Mommy." Then sat on the couch in a huff. Later a little voice asked, "Is it Sunday?" No. Second thoughts about turning down a weekday batch of lemon-ricotta pancakes, methinks. Fools.

I've been grumpy all day as a result of this totally unexpected not-cooking opportunity.

I love pancakes for brunch and for supper. I find them a bit too sweet and rich in the early morning though.

Tonight I'm making super fluffy pancakes and serving them with Lyle's golden syrup, whipped cream and sliced strawberries!

I love pancakes! Fluffy buttermilk pancakes with warm maple and salty butter cooked on a cast iron skillet are my favorite! They get these nice buttery crispy edges and are fluffy in the middle.Washed down with a glass of milk or a cup of good coffee. Nothing better!

I love Giada's Ricotta Pancakes with blueberries. There is also a recipe for a honey syrup that goes with them (I add a little lemon zest to the syrup when I make it, and it is awesome with the blueberries) http://tinyurl.com/63mqoz

I am a huge fan of adding oats to pancakes! And always using real maple syrup, even though I grew up on Log Cabin and the real stuff is pricey. It's worth it!

you know, I always just use a pancake mix from the store and then spiff it out. Here's an idea for my everything but a kitchen sink pancakes! Hope you like them.

Over the weekend, I made blueberry and mini chocolate chip pancakes.

I made the best PUMPKIN pancakes EVER this weekend, and they were so fabulously easy. Fluffy, sweet-but-not-too-sweet, and this great golden color even if they didn't turn that restaurant-golden on the griddle...

Oh, sorry, lost in a food memory.

(...soggy with real maple syrup, that melting crunch of salty bacon...)

Elaine's Special Pancakes at Mitchell London's (The Fairway Café) are the pinnacle of pancake perfection, and we have spent years trying to recreate the recipe (because neither Mitchell nor his mom Elaine are spilling the beans).

The trick is that is a small moist pancake that is not thick or doughy (hate doughy pancakes like they have at diners!). We have adapted a recipe from the cookbook "Home" which uses sour cream, and that seems to address the tender and moist quality nicely.

My husband makes one sort of pancake or another most Sundays -- orange ricotta, blueberry oatmeal, our version of Elaine's, French crepes, German puffy pancake, Danish Æbleskiver... I am still trying to perfect my version of Dutch apple pannekoeken though...

(which are traditionally topped off with Schenk Stroop, which is a raw cane sugar syrup, that is very different from maple syrup)

Banana pancakes! Lots of banana is the trick, along with a little extra water in the batter so they come out thin. My favorite! Use pure honey with some butter instead of syrup.

Swedish pancakes are also fantastic - try LUNDS- you don't really need the special pan (but it is pretty cool). Even my Norwegian Mor-Mor (grandmother) made delicious Swedish pancakes. The Swedes use fillings and roll them up. Here are the links for a complete Swedish pancake experience:
