We've been waiting to blog this for almost a year. This Pumpkin Seed Brittle from Epicurious is a stunning autumn treat, made with just a little water, salt, sugar, and green pumpkin seeds. The seeds get toasted as they cook in the caramelizing sugar. Great for snacking, or to serve with ice cream!

i've never cooked a pumpkin before, in any fashion. (i grew up thinking the guts were something to throw away, and that pumpkin pie filling came from a can. mea culpa.)

so, if i want to try this, and the recipe says use hulled green seeds....what's the best way for me to get the hull off the seed?
