15 Simple (Yet Meaty) Dinners for Autumn Evenings

We focus quite a bit on vegetarian and vegan eating here at The Kitchn. But lots of us eat meat too, and if you're a carnivore, then fall is the time for braised chicken and meaty beef stews. Here's a look at fifteen of our favorite easy recipes for meat. They're generally easy and quick; maybe you'll find a good weeknight supper recipe!

This feels like a broken record: why do the editors of this site continue to refer to meat-eaters as carnivores?

I'm with Heidz. "Omnivore" is the more correct term. Just ask Michael Pollan!

Gracious! We usually do refer to meat-eaters as omnivores; to wit: the recent Quick Weeknight Meals contest. I just used carnivore purposefully to really emphasize the meaty side of things. Had no idea it was such a hot-button issue with y'all!

A carnivore only eats meat. humans eat a wide variety of foods, hence they are omnivores. Why do vegetarians make such a big deal out of avoiding meat?

In my experience, it is not that vegetarians "make such a big deal" about the fact that they do not eat meat, but that North America is a predominantly omnivorous continent. It's disappointing to think that defending one's dietary choices could be construed as "making such a big deal out of things".

Personally, I think the use of carnivore in the post was fitting considering the topic at hand. It's just unfortunate that such a great list of recipes as the one above has been obscured by a debate surrounding a single politically incorrect term.

Thanks for the great ideas! They all look delicious.

I'd love some more ideas as to quick and easy meals that I can prepare with ground beef/chuck besides using it in a tomato based pasta sauce, "taco" night or for hamburgers. Ground beef is economical, tasty and quick to prepare. If you purchase it without too high of a fat content-is also healthy. Any suggestions would be much appreciated.

Rosebud~ I use ground beef or turkey in a quick "mexi-casserole" during the week. Brown the meat, add cumin, salt, chili powder, cayenne, & a jar of picante. Layer that with a can of drained black beans, shredded cheese, & flour tortillas cut into halves. Top with cheese, bake til bubbly, & finish with diced tomatos & scallions.

Rosebud -- I use ground beef in meatloaf, cabbage rolls, meatballs (my mom makes them in the crock-pot with a bottle of Diana sauce poured over top, and then serves them over rice). You can also use it as a pizza topping, in risotto, and in goulash. I'm not personally a fan of goulash, but some people enjoy it.

Is it possibly that meat eaters dislike "carnivore" because vegetarians make them feel guilty? I'm technically an "omnivore" but I have no problem with carnivore.
