10 Ways to Eat an Egg Tonight

• 1. Pizza - Eggs on breakfast pizza - it's so delicious! Tiny quail eggs cook quickly, if you want to go that route.

• 2. Open face sandwich - We like to pile a fried or scrambled egg on fresh, homemade bread along with any leftover vegetables or scraps from the fridge.

• 3. Baked in a dish - The easy, versatile method of baking eggs on top of whatever you have around - canned tomatoes, a little cream, some herbs - has been a brunch staple for us. Try them baked on top of leftover beans or lentils, too.

• 4. Frittata - The frittata a great make-ahead dish. Cook one up with eggs, potatoes, and vegetables, and eat off it all week.

• 5. Stir-fried - Stir-fried egg with rice is a classic comfort food.

• 6. Quiche - Quiche is more like a baked custard than the sturdier texture of a frittata. It's comforting and elegant at the same time.

• 7. Eggs 'n' greens - A fried egg over garlicky greens: it doesn't get much better than that!

I need to gloat - Made my first Frittata this weekend, and another on monday. I swear to Jebus, I make a delicious frittata.

I have a dozen eggs right now. I want to try the over noodles and baked in a dish this weekend.

I don't know where the recipe is anymore, but I made a great puff pastry tart with eggs once, and I've been dying for a chance to make it again. I'm pretty sure it was just prosciutto layered onto puff pastry (maybe brushed with olive oil first?), then loaded up with asparagus. Then you crack as many eggs as you'd like into little pockets formed by the asparagus and bake it in the oven until everything looks tasty! Oh, and pepper! But not salt; the prosciutto is already salty enough.

Eggs on any pizza is great- an 'Aussie' pizza usually includes an egg cracked over the top.

my current favorite weeknight egg meal consists of an over-easy egg mixed with smoked salmon over brown rice.

Fried rice with eggs scrambled in is tasty; I also love open-faced sandwiches topped with a fried egg, and also I like a potato and bacon hash with a poached egg (breakfast for dinner really).

My favorite egg dinner is savory french toast. Beat an egg with some salt & pepper and a splash of water, throw in some rye bread to soak, and fry 'em up! The rye bread (seeded, preferably) is key. Delicious, savory, and super quick.

my favorite egg dinner is spaghetti with butter and cheese topped with eggs poached in marinara. amazing, comforting and so simple.

We love love love frittata. Fast cheap and easy, plus good way to use up stuff just hanging around your fridge.

oh, man, I made a tart with an egg on it tonight! and I was very proud of myself for sneaking it in there, because in general I absolutely detest eggs when their presence can be detected.

Two of my favorite quick dinners with eggs is pasta carbonara, and a quick miso-egg drop soup. I simply boil water, blanch in some greens if I'm feeling especially fancy, stir in some miso *after* turning off the boiling water, then stirring in an egg til the ribbons cook in. So fast, healthy and delicious.

another way, but really close to number 9: boil some pasta (i prefer spaghetti but anything does it), then place it in a frying pan with some olive oil, chopped coriander and garlic (minced or powder), stir it well. poach and egg. place spaghetti in a plate, add the egg and some fresh chopped coriander! it's wonderful!

I had to come back and comment on this. I put a fried egg on top of my reheated pasta/peas last night for dinner and it was delicious. Adding an egg to leftovers is awesome, cheap and versatile.
