Make-Ahead Breakfast Recipe Review: Oatmeal Clafoutis

2009_04_21-Bars.jpgI first found this recipe at Chocolate & Zucchini (it's originally from Quaker Oats). I was attracted by Clotilde's description of it. She said that the clafoutis is like an oatmeal flan, full of all kinds of fruit and nuts. You can change out the mix-ins to your own liking, but she likes to use chopped, unpeeled apples, raisins, dried cranberries, sunflower seeds, and chopped walnuts.

The best part, though, is that these bars can be cut up after baking and frozen in individual portions. They are quite wet, like a firm, nutty baked oatmeal. They aren't chewy like granola bars, or crunchy either. But they hold together well, especially when you eat them straight out of the packaging.

2009_04_21-Bars02.jpgSo I have been doing this now for a long time; they are one of my favorite make-ahead breakfasts. I let them cool completely before slicing, then I cut them into long bars and wrap them in plastic wrap. I put them in the freezer in a big bag and heat them individually for breakfast.

I should add that my favorite savory breakfast of late has been about 3/4 cup of cooked quinoa mixed with one whisked egg and microwaved about 2-3 minutes until firm. Cool a bit and top with soy sauce and Siracha. It keeps me full forever and could not be easier.

tartelette has a similar idea with her lavender oatmeal squares. i've been making these for a month or two now and they're super tasty, easy to throw together, and very filling. i will take a few on the train in the morning with my coffee.

the best part is that the recipe's flexible, so that you don't have to risk a breakfast rut-- i do a lot of substituting, adding flax, currants, cinnamon, walnuts....even a pumpkin version. but the lavender is my favorite!

i recently posted a recipe for raspberry pear clafouti and suggested it for breakfast, but OATMEAL clafouti is genius. love it! thanks.

I made oatmeal clafouti on the weekend and it was great. Love a recipe that lets you throw in whatever nuts you have around and any fruit (I sliced up some aging strawberries instead of apple). Nice treat for what I like to call Second Breakfast.
