I made sformati di parmigiano (a Mario Batali recipe). Unfortunately, I didn't get a shot of them plated up, but I served them with a side of arugala and cherry tomatoes and drizzled a balsamic vinegar reduction on top. My dinner guest said they were awesome, but he's pretty easy to please!
