Ice Cream Pie! Made with 1-Ingredient Ice Cream
Reader Submission

2010_02_02-Pie.jpgTake a look at this great idea for an easy and rather lowfat dessert from reader Leslie. She took that amazing, miraculous 1-ingredient ice cream and made an ice cream pie out of it. Read on to see what she did!

Turning frozen bananas into creamy ice cream.

Here's what Leslie says:

It was really fun to make! First I crushed up some walnuts and sprinkled them on the bottom of a chocolate pie crust. Then I put the bananas and a little agave (agave because my bananas weren't very sweet)in the food processor and watched it crumble and unfold into... banana ice cream!

I poured that into the pie crust and dripped organic chocolate sauce on top. Then I put that into the freezer for a few minutes while I made the other batch of bananas.

This time I added peanut butter. Very yummy! I then poured the peanut butter banana ice cream on top of the first layer and let that freeze. Before serving I again dripped the organic chocolate sauce on top and garnished with whipped cream! So good!!!

I might try experimenting by adding different flavorings into the bananas like mint, coffee, different chopped nuts...

That looks amazing, Leslie! And it's a great idea; the banana ice cream is so easy to make, and it's very spreadable when it is first made. So it would be easy to spread it in a pie crust and freeze it. Yum!

This is... brilliant. I think I am going to try this with a graham cracker crust and some chopped walnuts on top...

Sorry to be the spelling police, but it's agave, not agavie.

Absolutely doing this! I've been loving the 1 ingredient ice cream and looking for ways to make it more interesting.

I'll probably use mini pie crusts because I hate/love having a whole pie to finish.

I must be the only one who did not have success with the banana ice cream. It wasn't even the slightest bit creamy like regular or low-fat ice cream is. I'd love to try this genius idea however, what am I doing wrong?

rosebud, I'm the same--my banana ice cream was disastrous. I thought maybe it was because I only had a mini food processor, so maybe it wasn't powerful enough? Or that my frozen bananas were quite old and had been in the freezer for awhile?

But this pie looks fantastic! Chocolate, banana, and peanut butter, mmmm.... (Strange time of year to feature it, though--I would consider this a summer dessert...)

For those that didn't have good results, my suggestion would be to let the bananas thaw out a bit. Straight out of the freezer, mine didn't do much. Then I let it sit out for about 20 minutes, then retried it, and oh, yes, perfect and delicious! (I have a mini too).

Yeah, I make mine with a mini chopper too (KitchenAid) and it always takes longer than I think it will to make this turn into ice cream. It's sort of like making whipped cream or butter; you churn and churn and think it won't work then all of sudden this semi-magic transformation happens...

This is why I love using frozen bananas in my breakfast smoothies. Seems like no matter how much other fruit I add, the banana makes the texture so smooth and creamy (mango helps with that, too).

I will DEFINITELY be doing this pie.

Great idea! Banana-chocolate-honey-peanut butter is one of my favorite food combinations.

how many bananas did you use for a whole pie? I agree this would be great to make in smaller dishes, too.

First: thanks Mboston, that was bugging me to :-/

More important: YUM

I always make "ice cream" with frozen bananas, cherries and a bit of unsweetened cocoa powder for a fairly healthy and delicious treat.

This pie looks amazing too!
