More Pizza Grilling Inspiration

2008_08_25-grilling-pizza.jpgI know, Grilling Month was last month but this weekend I took a break from churning ice cream (that's August's theme) and instead enjoyed what many of us enjoy all summer, making food over a fire (see awkward pizza-tending pose after the jump.)

Back in April, we grilled pizzas over an open fire and that experience was the subject of one of my weekly emails (sign up here) and then a post the following week. Now, in more weather-appropriate times, let's revisit the concept of open-fire pizza grilling.

It couldn't be easier or tastier. Armed with freshly picked jewel-orange cherry tomatoes, pesto, caramelized onions, prosciutto and a basket of figs, we hit on some great summery toppings.

2008_08_26-texsport-grill.jpgI am loving my Texsport Heavy Duty Camp Grills. This is the sort of thing you can keep in your trunk (or strapped to your bike, or slung across your body in a bag) and make an instant grill surface, given something on fire upon which to perch it. In our case, it was a campfire dug in the ground. Easy.

Given some cheesy bits as a base, you can go forward from there. Friday was fresh mozzarella, Saturday was the rest of the mozzarella with some Parmesan to fill in the bald patches and Sunday was an all-out fridge-cleaning adventure with rock-hard manchego and some funky herb-flecked goat cheese from our neighbor.

You're wondering about the crust. I didn't bother rolling out my own this weekend knowing how much pizza making I had ahead of me. I used flatbreads, available at bakeries and in some frozen sections of the grocery.

2008_08_26-pizza1.jpgThe first Friday night pizza went like this: flatbread, smear of olive oil, sliced mozzarella, halved and quartered bite-size tomatoes, drizzle of pesto, sea salt.

2008_08_26-pizza2.jpgThe second pizza sung the praises of the late summer fig the flatbread, olive oil and mozzarella withcaramelized onions, sliced figs, chiffonade of basil, sea salt.

All I'm saying is that "seriously, this is the best pizza I've ever had" was heard from one of the guests.

MMMM. I no longer have a grill, but you can see I spent part of my summer on
grilled pizzas of my own.
